  • 1 Onion (Quartered)
  • 1 Lemon (Quartered)
  • 3 sprigs Fresh Rosemary
  • 3 sprigs Fresh Thyme
  • 3 sprigs Fresh Sage
  • 1 cup Unsalted Butter (Softened)
  • 4 cloves Garlic (Minced)
  • 2 stalks Celery (Quartered)
  • 2 Carrots (Chopped)

Instructions

  1. Prep the turkey: Let it come to room temperature for 1 hour. Preheat your oven to 325°F (160°C). Remove giblets and pat the skin dry.
  2. Season the turkey: Generously sprinkle kosher salt and fresh ground black pepper inside the cavity. Stuff with quartered onion, lemon, and sprigs of rosemary, thyme, and sage.
  3. Make herb butter: Mix softened unsalted butter with minced garlic, salt, black pepper, and additional rosemary and thyme. Reserve a third for later.
  4. Apply herb butter: Loosen the turkey skin and rub a third of the herb butter underneath. Coat the outside with the remaining herb butter.
  5. Prepare roasting pan: Place chopped carrots, quartered celery, and an additional onion in the bottom of a large roasting pan.
  6. Position turkey: Place the seasoned turkey breast side up on top of the vegetables in the roasting pan. Tuck the wings underneath.
  7. Roast the turkey: Bake for about 15 minutes per pound, or until the internal temperature reaches 158°-160°F (2-4 hours, depending on size).
  8. Rest the turkey: Remove from oven, tent loosely with aluminum foil, and let rest for at least 30 minutes.
