- 2 cups gingerbread-style or spiced cookie crumbs
- 1/2 cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 3/4 cup sour cream
- 1/4 cup molasses
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 teaspoon vanilla extract
- Whipped cream
- Crushed cookies
- Powdered sugar
Instructions
- Preheat oven to 325°F (165°C). Mix cookie crumbs and melted butter until combined. Press firmly into the bottom of a greased 9-inch springform pan. Bake for 10 minutes and set aside to cool.
- Beat cream cheese until smooth. Add sugar and mix until creamy. Add eggs one at a time, mixing gently after each addition.
- Stir in sour cream, molasses, ginger, cinnamon, cloves, and vanilla until just combined.
- Pour filling over cooled crust and smooth the top. Place pan on a baking sheet.
- Bake for 55–65 minutes until edges are set and the center slightly jiggles.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Garnish with whipped cream, crushed cookies, or powdered sugar before serving.
