Ingredients
Scale
- 2 cups All-Purpose Flour (Feel free to swap with gluten-free flour.)
- 1 teaspoon Baking Soda (Make sure it’s fresh for the best texture.)
- 1 teaspoon Baking Powder (Make sure it’s fresh for the best texture.)
- 1 pinch Salt (Kosher salt is recommended.)
- 1 tablespoon Ground Spices (Cinnamon, Nutmeg, Cloves, Ginger) (Adjust to your taste for a spicier kick.)
- 1 cup Granulated Sugar (Coconut sugar can be used as a substitute.)
- 1 cup Dark Brown Sugar (Light brown sugar works as a suitable replacement.)
- ½ cup Vegetable Oil (Melted butter may alter texture but adds flavor.)
- 1 cup Full-Flavored Molasses (Substitutions can significantly change flavor.)
- 1 large Egg (Ensure it’s at room temperature for optimal mixing.)
- ¼ cup Warm Water (Milk can be used for a richer taste.)
- 1 teaspoon Vanilla Extract (Opt for pure vanilla for the best results.)
- ½ cup Unsalted Butter (Best if at room temperature for easy mixing.)
- 8 ounces Cream Cheese (Must be softened for a smooth consistency.)
- 2 cups Powdered Sugar (Sifting is recommended for the best texture.)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together dry ingredients: flour, baking soda, baking powder, salt, and ground spices in a large bowl.
- In a separate bowl, mix wet ingredients: granulated sugar, dark brown sugar, vegetable oil, molasses, egg, warm water, and vanilla extract until smooth.
- Gradually combine dry ingredients into wet ingredients until just mixed, avoiding over-mixing.
- Scoop tablespoonfuls of batter onto baking sheets, spaced about 3 inches apart. Bake for 8-10 minutes until domed and springy.
- Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Prepare cream cheese frosting by beating softened butter and cream cheese together, then mixing in vanilla and powdered sugar until fluffy.
- Assemble by spreading frosting on the flat side of one cake and topping with another to create a sandwich.
Notes
- Store in an airtight container for freshness.
- Chill the frosting for a firmer texture if necessary.
- These pies freeze well; wrap them tightly to preserve flavor.
