  • ½ cup (120ml) warm milk (or dairy-free milk), about 110°F
  • ⅓ cup (65g) granulated sugar
  • ¼ cup (57g) unsalted butter, melted (or dairy-free butter)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2¾ cups (330g) gluten-free all-purpose flour (with xanthan gum)
  • 1 teaspoon baking powder
  • ⅓ cup (75g) unsalted butter, softened (or dairy-free)
  • ¾ cup (150g) brown sugar
  • 1 tablespoon ground cinnamon
  • 4 oz (113g) cream cheese, softened (dairy-free optional)
  • ¼ cup (57g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine warm milk and yeast and let sit 5–10 minutes until foamy.
  2. In a bowl, combine sugar, melted butter, eggs, vanilla, and salt. Stir in the activated yeast mixture.
  3. Slowly add gluten-free flour and baking powder until a soft, sticky dough forms.
  4. Cover and let the dough rise for 60–90 minutes until slightly puffy.
  5. Roll dough on parchment paper into a ¼-inch-thick rectangle.
  6. Spread butter over dough and sprinkle brown sugar and cinnamon mixture.
  7. Roll tightly from the long edge and slice into 8–10 rolls.
  8. Place rolls in a greased 9×13 pan, cover, and rise 30–45 minutes.
  9. Bake at 350°F (175°C) for 25–30 minutes until golden.
  10. Mix cream cheese, butter, powdered sugar, vanilla, and salt until smooth.
  11. Spread icing on warm rolls and enjoy!
