Description

Ingredients

  • 4 tablespoons unsalted butter, divided
  • 1 shallot, thinly sliced
  • 1 garlic clove, thinly sliced
  • 2 tablespoons capers, drained
  • 1/3 cup reduced-sodium vegetable broth
  • 1/4 cup dry white wine
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons freshly grated Parmesan cheese
  • 2 tablespoons minced fresh parsley plus more for garnish
  • Salt and pepper to taste
  • 1 package (16 ounces) potato gnocchi

Instructions

  1. Make the sauce
  2. In a small skillet, melt 2 tablespoons of butter over medium heat. Add the shallot and sauté until golden, about four to six minutes.
  3. Add the capers and garlic and sauté until fragrant, about 30 to 60 seconds. Stir in the vegetable broth and white wine, then reduce heat to low. Simmer until slightly reduced, five to seven minutes.
  4. Remove the skillet from heat and stir in the lemon juice, grated Parmesan, and fresh parsley. Season with salt and pepper.
  5. While the sauce simmers, prepare the gnocchi. In a separate large skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the gnocchi in a single layer and cook, stirring occasionally, until golden, about four to five minutes. Add the lemon-caper sauce and cook until heated through, about two to three minutes. Garnish with additional fresh minced parsley and serve.
