Description

Enjoy a delightful Golden Crostata with Winter Fruits, a cozy dessert that captures the flavors of the season.

Ingredients

Scale
  • 2 cups plain flour (or whole wheat flour for added fiber)
  • 1 cup unsalted cultured butter (or vegan butter for a dairy-free option)
  • 5 tablespoons ice-cold water
  • 1 tablespoon apple cider vinegar (or lemon juice as a substitute)
  • 3 cups fruits (apples or pears; can include nectarines, peaches, or plums)
  • 1 cup almond meal (omit for nut-free version)
  • 1/2 cup sugar (adjust according to fruit sweetness)
  • 1 tablespoon vanilla bean paste (or vanilla extract as an alternative)
  • 1 beaten egg (for egg wash)

Instructions

  1. Preheat the oven to 190°C (375°F) and line a large baking tray with baking paper.
  2. Combine flour and butter in a food processor until the mix resembles coarse breadcrumbs.
  3. Add ice-cold water and apple cider vinegar gradually while blending, stopping once the dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Mix the fruits, almond meal, sugar, and vanilla bean paste in a bowl; set aside.
  6. Roll out the chilled dough on a floured surface into a circle about 5mm thick.
  7. Spoon the fruit mixture into the center, leaving about a 4 cm border, and fold the edges over the filling.
  8. Dot the filling with small bits of butter, sprinkle with sugar, and brush the pastry edges with beaten egg.
  9. Bake for 40 minutes or until the pastry is golden brown and the fruit filling is bubbling.
  10. Cool slightly and serve at room temperature.

Notes

  • Adjust sugar based on the sweetness of your fruit.
  • For a nut-free version, omit the almond meal.
  • Serve with whipped cream or ice cream for added indulgence.
