- 1 tablespoon vanilla bean paste (or vanilla extract as an alternative)
- 1 beaten egg (for egg wash)
Instructions
- Preheat the oven to 190°C (375°F) and line a large baking tray with baking paper.
- Combine flour and butter in a food processor until the mix resembles coarse breadcrumbs.
- Add ice-cold water and apple cider vinegar gradually while blending, stopping once the dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Mix the fruits, almond meal, sugar, and vanilla bean paste in a bowl; set aside.
- Roll out the chilled dough on a floured surface into a circle about 5mm thick.
- Spoon the fruit mixture into the center, leaving about a 4 cm border, and fold the edges over the filling.
- Dot the filling with small bits of butter, sprinkle with sugar, and brush the pastry edges with beaten egg.
- Bake for 40 minutes or until the pastry is golden brown and the fruit filling is bubbling.
- Cool slightly and serve at room temperature.
