Ingredients

  • 1 cup Feta Cheese (Crumble before adding)
  • ½ cup Walnuts (Chopped; substitute with pecans or omit for nut-free)
  • 1 medium Lemon Juice (Use fresh juice)
  • 3 tablespoons Olive Oil (Or avocado oil as an alternative)
  • Salt & Pepper (To taste)

Instructions

  1. Trim the ends off the green beans and boil salted water. Steam beans for 3-5 minutes until bright green and crisp-tender, then transfer to an ice bath.
  2. In a bowl, combine lemon juice and olive oil, then season with salt and pepper. Whisk until emulsified.
  3. Once cooled, combine green beans, feta, and walnuts in a mixing bowl. Drizzle vinaigrette over and toss gently.
  4. Chill the salad for 15 minutes before serving. Enjoy at room temperature for best flavor.
