Description

Grilled Cajun shrimp skewers with herb couscous are a mouthwatering dish that combines juicy shrimp marinated in bold Cajun spices and grilled to perfection, served over a fluffy bed of herbed couscous.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 cup couscous
  • 2 cups water
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Marinate the shrimp in olive oil, Cajun seasoning, and lemon juice for 15-30 minutes.
  2. Bring water to a boil in a medium saucepan, add couscous and a pinch of salt, cover, and let steam for 5 minutes.
  3. Skewer the marinated shrimp onto skewers without overcrowding.
  4. Grill the skewers on medium-high heat for about 2 minutes per side until pink and opaque.
  5. Fluff the cooked couscous with a fork and mix in parsley and cilantro.
