- 1 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 cup couscous
- 2 cups water
- ¼ cup fresh parsley, chopped
- ¼ cup fresh cilantro, chopped
Instructions
- Marinate the shrimp in olive oil, Cajun seasoning, and lemon juice for 15-30 minutes.
- Bring water to a boil in a medium saucepan, add couscous and a pinch of salt, cover, and let steam for 5 minutes.
- Skewer the marinated shrimp onto skewers without overcrowding.
- Grill the skewers on medium-high heat for about 2 minutes per side until pink and opaque.
- Fluff the cooked couscous with a fork and mix in parsley and cilantro.
- Serve the grilled shrimp over the herbed couscous with an extra drizzle of lemon juice.
