Description

This easy family dinner recipe features juicy, pan-seared hamburger steak patties smothered in a rich, savory brown onion gravy. It’s a comforting, Southern-inspired dish perfect for weeknights or family gatherings, delivering restaurant-quality flavor with everyday ingredients.

Ingredients

Scale
  • 2 Tbsp olive oil
  • 1.5 lbs ground beef (85% lean)
  • 4 Tbsp frozen butter, shredded
  • 0.5 cup yellow onion, very finely minced
  • 2 tsp yellow mustard
  • 3 tsp Worcestershire sauce
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 yellow onions, sliced into 3/4-inch rings
  • 3 Tbsp cold unsalted butter, divided
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1 tsp onion powder
  • 0.5 tsp garlic powder
  • 1.5 tsp Worcestershire sauce (for gravy)
  • 0.25 cup cold water + 3 Tbsp cornstarch
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine ground beef, minced onions, shredded frozen butter, garlic, Worcestershire sauce, and mustard. Gently mix until just combined; avoid overmixing to keep patties tender.
  2. Shape the mixture into evenly sized oval hamburger steaks. Refrigerate for about 15 minutes to firm up the texture.
  3. Heat olive oil in a large skillet over medium-high heat. Season patties with salt and pepper, then sear each side for 2-3 minutes until browned. Remove and set aside.
  4. Reduce the heat to medium-low. Melt 2 tablespoons of butter in the same skillet and add the sliced onions. Cook for 15-20 minutes, stirring occasionally, until onions are soft and caramelized.
  5. Add chicken broth, beef broth, onion powder, garlic powder, and Worcestershire sauce. Stir to scrape up the flavorful browned bits from the bottom of the pan.
  6. Whisk together cold water and cornstarch in a small bowl until smooth. Bring the gravy to a boil, then slowly whisk in the cornstarch mixture until thickened. Lower heat to a gentle simmer.
  7. Return the browned patties to the skillet and spoon the onion gravy over them. Cover and simmer for about 10 minutes, or until cooked through and tender (internal temperature 160°F).
  8. Stir in the remaining tablespoon of cold butter at the end for a rich, velvety finish. Garnish with fresh parsley and serve hot with mashed potatoes, rice, or vegetables.

Notes

  • Use 85% lean beef for the perfect balance of flavor and juiciness.
  • Shredding frozen butter into the beef mixture keeps the patties moist while cooking.
  • Caramelize onions slowly over low heat for deeper flavor.
  • Adjust gravy thickness by adding more cornstarch slurry if needed.
  • Serve with mashed potatoes or rice to soak up the delicious gravy.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
