- 4 cups Potatoes (Starchy varieties like Russets are best.)
- 2 tablespoons Olive Oil (Can be substituted with vegetable oil.)
- 1 medium Onion (Diced.)
- 1 head Fresh Garlic (Roasted.)
- 4 cups Vegetable Broth (Chicken broth can be used if preferred.)
- 1 teaspoon Salt (Adjust according to broth’s saltiness.)
- 1/4 cup Fresh Parsley (For garnish, optional.)
- 1 cup Croutons (For topping.)
- 1/2 cup Cheese (Melted Parmesan or cheddar.)
- 1 cup Greens (Spinach or kale, for added nutrition.)
Instructions
- Start by peeling and chunking your potatoes into 1-inch pieces.
- Dice the onion into 1/2-inch pieces.
- Roast the whole heads of garlic for 45 minutes at 400°F until soft and fragrant.
- In a large pot, heat a splash of olive oil over medium heat.
- Add the diced onion and cook for about 8 minutes until it’s translucent.
- Toss in the minced garlic and 1/2 teaspoon of salt, cooking for 1 additional minute.
- Pour in your vegetable broth, then add the potato chunks along with the remaining salt.
- Bring everything to a boil, then reduce the heat and let it simmer uncovered for 15-20 minutes.
- Mash a portion of the cooked potatoes with a fork for a chunky texture, or blend for a creamy consistency.
- Stir in the roasted garlic cloves infused with flavor.
- Adjust seasoning, ladle into bowls, and garnish with croutons, grated cheese, or parsley.
