- 3 cups cooked chicken breast, diced or shredded
- 6 cups mixed greens (spinach, arugula, or spring mix)
- 1 crisp apple, thinly sliced or diced
- ½ cup dried cranberries or dried cherries
- ½ cup chopped nuts (pecans or walnuts)
- ¼ cup red onion, thinly sliced
- ½ cup mayonnaise or plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- Salt and black pepper, to taste
Instructions
- If not already cooked, season chicken with salt and pepper and cook until tender. Let cool, then dice or shred.
- In a small bowl, whisk together mayonnaise or Greek yogurt, Dijon mustard, honey, apple cider vinegar, salt, and pepper until smooth.
- In a large bowl, combine mixed greens, chicken, apple, dried fruit, nuts, and red onion. Toss gently.
- Drizzle dressing over the salad just before serving and toss lightly until evenly coated.
