Ingredients

  • 3 cups cooked chicken breast, diced or shredded
  • 6 cups mixed greens (spinach, arugula, or spring mix)
  • 1 crisp apple, thinly sliced or diced
  • ½ cup dried cranberries or dried cherries
  • ½ cup chopped nuts (pecans or walnuts)
  • ¼ cup red onion, thinly sliced
  • ½ cup mayonnaise or plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper, to taste

Instructions

  1. If not already cooked, season chicken with salt and pepper and cook until tender. Let cool, then dice or shred.
