Description
Infamous Apple Curry is a creamy vegan dish that blends the sweetness of apples with savory spices and vegetables. It’s a quick and adaptable meal, perfect for weeknights.

			- 2 tbsp Coconut Oil
 - 2 Onions, diced
 - 4 cloves Garlic, minced
 - 6 cups Apples, cubed
 - 1.5 cups Potatoes, cubed
 - 1.5 cups Courgette/Zucchini, cubed
 - 1.5 cups Squash, cubed
 - 3 tsp Curry Powder
 - 2 tsp Garam Masala
 - 2 tsp Tandoori Masala
 - 1 cup Coconut Milk
 - 1.5 cups Water
 - 1 tsp Salt
 - 1 tbsp Peanut Butter
 - 1 can Adzuki Beans, 240 g
 
Instructions
- Heat coconut oil in a large pan over medium-high heat. Add diced onions and sauté until browned, about 5 minutes.
 - Add minced garlic and stir for 1 minute. Add curry powder, garam masala, and tandoori masala. Stir to coat.
 - Add cubed apples, potatoes, courgette, and squash. Sauté for 2 more minutes.
 - Pour in coconut milk and water. Add salt and peanut butter. Stir and bring to a boil.
 - Reduce heat to low, cover, and simmer for 15 minutes.
 - Stir in adzuki beans and heat through for 3 minutes.
 - Remove from heat and let cool for 10 minutes.
 - Serve warm over rice, with naan, or alongside popadoms.

- Experiment with different vegetables and apple varieties.
