Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 5 ounces kale, stems removed and chopped
  • Salt and freshly ground black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic, Italian seasoning, and red pepper flakes (if using) and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Return the cooked chicken to the pot. Stir in heavy cream and sun-dried tomatoes.
  5. Add chopped kale and simmer for 5-7 minutes, or until the kale is tender.
