- 1 cup green or brown lentils (uncooked)
- 1 cup shredded carrots
- 1 cup grated zucchini
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup breadcrumbs (whole wheat or gluten-free)
- 2 large eggs
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a pot, combine lentils and water; bring to boil and simmer until tender (20-25 minutes). Drain excess water.
- Sauté onions in olive oil until translucent; add carrots, zucchini, and garlic; cook until softened.
- In a bowl, mix cooked lentils, sautéed veggies, breadcrumbs, eggs, cumin, paprika, salt, and pepper until well combined.
- Transfer the mixture to the loaf pan; shape it firmly and bake for about 60 minutes until golden brown.
- Let cool slightly before slicing and serve with your favorite sauce.
