Ingredients

  • 1 cup green or brown lentils (uncooked)
  • 1 cup shredded carrots
  • 1 cup grated zucchini
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup breadcrumbs (whole wheat or gluten-free)
  • 2 large eggs
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a pot, combine lentils and water; bring to boil and simmer until tender (20-25 minutes). Drain excess water.
  3. Sauté onions in olive oil until translucent; add carrots, zucchini, and garlic; cook until softened.
  4. In a bowl, mix cooked lentils, sautéed veggies, breadcrumbs, eggs, cumin, paprika, salt, and pepper until well combined.
  5. Transfer the mixture to the loaf pan; shape it firmly and bake for about 60 minutes until golden brown.
  6. Let cool slightly before slicing and serve with your favorite sauce.
