 - 1/4 cup instant vanilla pudding mix OR 4 tsp unflavored gelatin + 4 tbsp cold water
 
Instructions
- Chill your metal or glass mixing bowl and beaters in the freezer for at least 10-15 minutes.
 - Prepare your stabilizer: If using gelatin, sprinkle it over cold water, let it bloom for 5 minutes, then gently melt it until clear and let it cool slightly. If using pudding mix, no preparation is needed.
 - Pour the ice-cold heavy cream into the chilled bowl. Whip on medium speed until it just begins to thicken, showing trails from the beaters.
 - With the mixer on low, gradually add the sifted powdered sugar, vanilla extract, and almond extract (if using). Once incorporated, turn the mixer back up to medium.
 - Stabilize the frosting: If using gelatin, slowly drizzle the cooled liquid into the cream while the mixer is running on medium speed. If using pudding mix, sprinkle the dry mix over the cream while the mixer is running on low.
 - Increase the mixer speed to medium-high and whip until stiff peaks form. Watch closely and stop the mixer as soon as stiff peaks are achieved to avoid over-whipping.
 - Your light whipped cream frosting is ready to use immediately.
