Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 large sweet potato, peeled and cubed
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potato with 1/2 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet.
  3. Bake the sweet potatoes for 15 minutes.
  4. While the potatoes bake, prepare the maple glaze. In a small bowl, whisk together maple syrup, soy sauce, remaining 1/2 tablespoon olive oil, Dijon mustard, and minced garlic.
  5. Season the chicken pieces with salt and pepper.
  6. Add the chicken to the baking sheet with the sweet potatoes.
  7. Pour the maple glaze evenly over the chicken and sweet potatoes.
  8. Bake for another 20-25 minutes, or until the chicken is cooked through and the glaze is caramelized.
  9. Serve the maple-glazed chicken and sweet potatoes immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the glaze.
  • You can use chicken thighs for a more tender result.
