- 2 lbs baby potatoes (halved or quartered)
- ⅓ cup mayonnaise
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme or rosemary (optional)
- ¼ cup grated parmesan cheese (optional but amazing)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Prepare potatoes.
- Place cut potatoes in a large bowl.
- In a small bowl, mix mayonnaise, olive oil, garlic powder, onion powder, paprika, salt, pepper, and herbs.
- Pour mixture over potatoes and toss until fully coated.
- Spread potatoes in a single layer on the baking sheet, cut sides down for best browning.
- Sprinkle parmesan over the potatoes.
- Bake for 35–40 minutes, flipping once halfway, until golden brown and crispy.
- Garnish with fresh parsley and serve hot.
