Ingredients
- 1 pound ground beef
 - 1 tablespoon olive oil
 - 1 medium onion, chopped
 - 2 cloves garlic, minced
 - 1 red bell pepper, chopped
 - 1 green bell pepper, chopped
 - 1 cup cherry tomatoes, halved
 - 1/2 cup Kalamata olives, pitted and halved
 - 1/4 cup chopped fresh parsley
 - 1 teaspoon dried oregano
 - 1/2 teaspoon dried basil
 - Salt and black pepper to taste
 - 1/4 cup crumbled feta cheese (optional)
 - Cooked couscous or rice, for serving
 
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
 - Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
 - Add chopped onion and cook until softened, about 3-4 minutes.
 - Stir in minced garlic and cook for 1 minute more until fragrant.
 - Add chopped red and green bell peppers to the skillet. Cook for 5-7 minutes, until they are tender-crisp.
 - Stir in halved cherry tomatoes and Kalamata olives. Cook for another 2-3 minutes, until tomatoes are slightly softened.
 - Season the Mediterranean ground beef stir with dried oregano, dried basil, salt, and black pepper. Stir well to combine.
 - Stir in fresh parsley.
 - Serve the Mediterranean ground beef stir-fry hot over cooked couscous or rice.
 - Top with crumbled feta cheese, if desired.
