Mini sugar cookies are the best cookies for a crowd, thanks to their simple yet irresistible flavor and easy-to-eat size.

- 1 cup of unsalted butter, softened
- 1 cup of granulated sugar
- 2 cups of all-purpose flour
- 1 tsp almond extract (optional for a lovely flavor twist)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat to prevent sticking.
- In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer. Beat until light and fluffy, about 3 minutes.
- Once the butter and sugar are well combined, add the almond extract. Mix until fully incorporated.
- Gradually add the all-purpose flour to the butter mixture. Mix until the dough begins to come together. It should be slightly soft but not sticky.
- Scoop small portions of dough, about the size of a tablespoon, and roll them into balls. Space them evenly on the prepared baking sheet, about 2 inches apart.
- Gently press down on each dough ball with a fork or your fingers to flatten them slightly. This will give them the signature sugar cookie look.
- Bake for 8-10 minutes or until the edges are just beginning to turn golden. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a cooling rack.
