- 4 salmon fillets (skin-on, 6 ounces each)
- ¼ cup miso paste (white or yellow)
- 2 tablespoons unsalted butter (melted)
- 2 tablespoons honey
- ¼ teaspoon black pepper
- 1 tablespoon vegetable oil (for cooking)
- 4 scallions (chopped finely)
- ½ cup fresh parsley (chopped)
- 3 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a bowl, whisk together the miso paste, melted butter, honey, and black pepper until well combined.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is evenly coated. Let it marinate for 10-15 minutes.
- In a large skillet, heat vegetable oil over medium-high heat until it shimmers.
- Carefully place the marinated salmon fillets, skin-side down, in the skillet. Cook for about 4-5 minutes, then gently flip and cook for another 3-4 minutes, or until cooked through. The salmon should flake easily with a fork.
- While the salmon is cooking, add chopped scallions to the skillet and sauté them in the leftover oil for about 2-3 minutes until they become fragrant and slightly crisp.
- In a bowl, combine the sautéed scallions, parsley, olive oil, lemon juice, and salt to taste. Mix well and set aside.
- Remove the salmon from the skillet and place it on plates. Top generously with the sizzled scallion salsa verde.
