Ingredients

  • 4 salmon fillets (skin-on, 6 ounces each)
  • ¼ cup miso paste (white or yellow)
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoons honey
  • ¼ teaspoon black pepper
  • 1 tablespoon vegetable oil (for cooking)
  • 4 scallions (chopped finely)
  • ½ cup fresh parsley (chopped)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. In a bowl, whisk together the miso paste, melted butter, honey, and black pepper until well combined.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is evenly coated. Let it marinate for 10-15 minutes.
  3. In a large skillet, heat vegetable oil over medium-high heat until it shimmers.
  4. Carefully place the marinated salmon fillets, skin-side down, in the skillet. Cook for about 4-5 minutes, then gently flip and cook for another 3-4 minutes, or until cooked through. The salmon should flake easily with a fork.
  5. While the salmon is cooking, add chopped scallions to the skillet and sauté them in the leftover oil for about 2-3 minutes until they become fragrant and slightly crisp.
  6. In a bowl, combine the sautéed scallions, parsley, olive oil, lemon juice, and salt to taste. Mix well and set aside.
  7. Remove the salmon from the skillet and place it on plates. Top generously with the sizzled scallion salsa verde.
