Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon salt

  • ¼ teaspoon ground cloves
  • 1 can (15 oz) pumpkin puree
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease or line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Stir in chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
