Description
These golden, fluffy simple muffins are soft on the inside with a perfectly domed top and just the right touch of sweetness.
Ingredients

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the milk, oil, eggs, and vanilla extract.
- Pour the wet mixture into the dry ingredients and gently mix just until combined.
- Fill each muffin cup about 3/4 full with the batter. Sprinkle a little sugar on top if desired.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
