Description

Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the milk, oil, eggs, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and gently mix just until combined.
  5. Fill each muffin cup about 3/4 full with the batter. Sprinkle a little sugar on top if desired.
  6. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
