Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes. Add vanilla extract and salt, mixing thoroughly. Gradually sift in the all-purpose flour and cocoa powder, followed by melted dark chocolate chips. Stir until the dough is uniform in texture.
- If the cookie dough feels too sticky, cover it with plastic wrap and chill in the refrigerator for about 20-30 minutes.
- Once chilled, take small portions of the cookie dough (about 1 tablespoon each) and roll them into balls. Place them on a parchment-lined baking sheet, ensuring space between each ball. Roll each cookie ball in finely crushed mixed nuts.
- Carefully place the baking sheet in the preheated oven and bake for 10-12 minutes. The edges should be set while remaining soft in the center.
- Allow the cookies to cool on the baking sheet for about 5 minutes. Create an indentation in each cookie and fill it with heavy cream.
- Let the cookies cool completely on a wire rack, then dust with powdered sugar if desired.
