- 1 lb fresh okra, sliced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 tsp paprika
- ½ tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by washing and slicing the okra, chopping the onion, and mincing the garlic.
- In a large pot over medium heat, heat the olive oil. Add the onion and garlic; sauté until softened (about 5 minutes).
- Stir in the sliced okra with salt and pepper; sauté for an additional 3 minutes.
- Pour in the chicken broth and diced tomatoes; add paprika and cayenne pepper. Stir well.
- Bring to a gentle boil, then reduce heat to low and let simmer uncovered for 20 minutes.
- Taste and adjust seasoning if needed before serving hot.
