One Pan Chicken and Pineapple Tacos are a quick, flavorful weeknight dinner featuring juicy chicken, sweet caramelized pineapple, and warm spices, all made in one skillet.

- 1 ½ pounds chicken thighs, boneless and skinless
- 2 cups fresh pineapple chunks
- ½ red onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 lime, juiced
- 8 corn tortillas
- 1 ½ cups shredded cabbage or slaw mix
Instructions
- Dice the chicken thighs into bite-sized pieces, chop the onion, and mince the garlic. Cube the fresh pineapple if using whole.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and let it sear for 4-5 minutes undisturbed. Season with salt, pepper, chili powder, cumin, and paprika.
- Add chopped onion and garlic. Cook for 2 minutes until softened and fragrant.
- Stir in pineapple chunks. Let them caramelize for 3-4 minutes until golden and slightly sticky.
- Remove from heat and squeeze in fresh lime juice. Toss everything to coat evenly.
- Warm tortillas in a dry pan or over an open flame. Fill each with chicken-pineapple mixture and top with cabbage or slaw. Serve immediately.
