One-Pan Herbed Lemon + Asparagus Chicken is an easy and flavorful dish that brings together juicy chicken breasts, vibrant asparagus, and zesty lemon in a single pan.

- 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
- 1 bunch fresh asparagus (about 1 lb)
- 3 garlic cloves, minced
- 3 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- 2 tsp dried thyme (or 2 tbsp fresh)
- 2 tsp dried rosemary (or 2 tbsp fresh)
- 3 tbsp low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season the chicken breasts with salt and pepper, then arrange them in the baking dish.
- Trim the woody ends off the asparagus and scatter them around the chicken along with minced garlic.
- In a small bowl, whisk together lemon juice, olive oil, soy sauce, thyme, and rosemary.
- Pour the mixture over the chicken and asparagus evenly.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of at least 165°F (75°C). Drizzle any remaining sauce from the pan over before serving.
