Description

One-Pan Herbed Lemon + Asparagus Chicken is an easy and flavorful dish that brings together juicy chicken breasts, vibrant asparagus, and zesty lemon in a single pan.


Ingredients

  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 1 bunch fresh asparagus (about 1 lb)
  • 3 garlic cloves, minced
  • 3 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried thyme (or 2 tbsp fresh)
  • 2 tsp dried rosemary (or 2 tbsp fresh)
  • 3 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper, then arrange them in the baking dish.
  3. Trim the woody ends off the asparagus and scatter them around the chicken along with minced garlic.
  4. In a small bowl, whisk together lemon juice, olive oil, soy sauce, thyme, and rosemary.
  5. Pour the mixture over the chicken and asparagus evenly.
  6. Bake for 25-30 minutes or until the chicken reaches an internal temperature of at least 165°F (75°C). Drizzle any remaining sauce from the pan over before serving.
