Delicious Orange Chocolate Chip Muffins Recipe

- 1 ¾ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg
- 1 cup buttermilk (or regular milk with 1 tbsp lemon juice)
- ¼ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- Zest of 1 large orange
- 2 tbsp fresh orange juice
- 1 cup chocolate chips (semi-sweet or milk chocolate, depending on preference)
Instructions
- Preheat your oven to 375°F (190°C). Line your muffin tin with paper liners or lightly grease it with non-stick spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, buttermilk, oil, vanilla extract, orange zest, and orange juice until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips until evenly distributed.
- Spoon the batter into the muffin tin, filling each cup about ¾ full.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins are cooling, whisk together the powdered sugar, orange juice, and vanilla extract. Drizzle the glaze over the cooled muffins for an extra burst of orange flavor.
- Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
