- 1 cup Monterey Jack Cheese, shredded
- 1/2 cup Milk, plus more if needed
- 1/4 cup Heavy Cream
- 1/4 cup Diced Tomatoes, optional for topping
- 2 tablespoons Fresh Cilantro, chopped
- Salt, to taste
- Tortilla Chips, for dipping
Instructions
- Melt Butter: Begin by heating unsalted butter in a medium saucepan over medium heat until it’s melted.
- Sauté Aromatics: Add the finely diced yellow onion and chopped jalapeño to the melted butter. Sauté for about 3-4 minutes until softened.
- Melt the Cheese: Lower heat to medium-low. Gradually add the shredded cheeses, stirring continuously until smooth.
- Combine Dairy: Pour in milk and heavy cream, stirring until desired consistency is reached.
- Season & Serve: Remove from heat, season with salt, garnish as desired, and serve immediately with tortilla chips.
