  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1.5 lbs baby potatoes, halved or quartered if large
  • 4 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, half of the minced garlic, oregano, basil, salt, and pepper. Spread the potatoes in a single layer on a baking sheet.
  3. Roast the potatoes for 20 minutes.
  4. While the potatoes are roasting, toss the chicken pieces with the remaining 2 tablespoons of olive oil, the rest of the minced garlic, salt, and pepper.
  5. Add the seasoned chicken to the baking sheet with the potatoes.
  6. Bake for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and slightly crispy.
  7. Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the chicken and potatoes.
  8. Return the baking sheet to the oven for 2-3 minutes, or until the Parmesan cheese is melted and lightly golden.
