Description
A warm and comforting peach cobbler baked in a cast iron skillet, perfect with fresh or canned peaches and a buttery crumble topping.

- 5–6 fresh peaches, peeled and sliced (about 5 cups) or 2 cans (15 oz each) sliced peaches, drained
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted and divided
- 3/4 cup milk
Instructions
- Preheat the oven to 375°F (190°C).
- Toss fresh peach slices or drained canned peaches with granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, and nutmeg in a mixing bowl.
- Let the peach mixture sit for 10 minutes to draw out juices.
- Melt 2 tablespoons of butter in a 10-inch cast iron skillet, then spread the peach mixture evenly in the skillet.
- Whisk flour, baking powder, salt, and remaining sugar in a bowl.
- Stir melted butter and milk into the dry ingredients until a thick batter forms.
- Spoon or pour the batter over the peaches in the skillet, leaving some fruit visible.
- Bake for 35-45 minutes until the topping is golden and the filling is bubbling.
- Let the cobbler rest for 10 minutes before serving.
- Serve warm, optionally with vanilla ice cream or whipped cream.
