  • 2 cloves garlic (minced)
  • 2 cups fresh herbs (such as parsley, cilantro, and chives, chopped)
  • 1 cup yellow split peas or lentils
  • 1 large tomato (chopped)
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 cups beef broth or water
  • 3 tablespoons vegetable oil
  • 2 cups basmati rice
  • Lemon wedges (for serving)
  • Saffron (optional, for garnish)

Instructions

  1. Chop the onion, garlic, and herbs. Cube the beef into bite-sized pieces.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
  3. Stir in the minced garlic, turmeric, and cinnamon, cooking for an additional minute until fragrant.
  4. Add the beef cubes to the pot, browning on all sides for about 5-7 minutes.
  5. Stir in the chopped tomatoes, split peas, salt, and pepper. Mix everything well.
  6. Pour in the beef broth or water, bringing the mixture to a boil.
  7. Reduce the heat to low, covering the pot and letting it simmer for about 1 hour or until the beef and split peas are tender.
  8. While the stew simmers, rinse the basmati rice until the water runs clear, then soak for 30 minutes.
  9. In another pot, combine the soaked rice with water (2 cups) and a pinch of salt. Bring to a boil and then cook until water is absorbed. Adjust cooking time to achieve fluffy rice.
  10. Once the stew is ready, serve it hot over the prepared rice. Garnish with fresh herbs or saffron if desired.
