- 1 pound beef (cubed)
- 1 large onion (finely chopped)
- 2 cloves garlic (minced)
- 2 cups fresh herbs (such as parsley, cilantro, and chives, chopped)
- 1 cup yellow split peas or lentils
- 1 large tomato (chopped)
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 4 cups beef broth or water
- 3 tablespoons vegetable oil
- 2 cups basmati rice
- Lemon wedges (for serving)
- Saffron (optional, for garnish)
Instructions
- Chop the onion, garlic, and herbs. Cube the beef into bite-sized pieces.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic, turmeric, and cinnamon, cooking for an additional minute until fragrant.
- Add the beef cubes to the pot, browning on all sides for about 5-7 minutes.
- Stir in the chopped tomatoes, split peas, salt, and pepper. Mix everything well.
- Pour in the beef broth or water, bringing the mixture to a boil.
- Reduce the heat to low, covering the pot and letting it simmer for about 1 hour or until the beef and split peas are tender.
- While the stew simmers, rinse the basmati rice until the water runs clear, then soak for 30 minutes.
- In another pot, combine the soaked rice with water (2 cups) and a pinch of salt. Bring to a boil and then cook until water is absorbed. Adjust cooking time to achieve fluffy rice.
- Once the stew is ready, serve it hot over the prepared rice. Garnish with fresh herbs or saffron if desired.
