Instructions
- Preheat the oven to 170°C.
- Cream the butter and sugar until light and fluffy.
- Add the eggs one by one.
- Add the vanilla and almond extract.
- Incorporate the flour, baking powder, and salt.
- Add the ground pistachios.
- Add milk to achieve a soft dough.
- Add a few drops of green gel food coloring and mix until uniform.
- Pat the cherries dry to avoid sinking.
- Dust them lightly in flour.
- Gently fold them into the batter.
- Pour the batter into a greased loaf pan.
- Bake for 45–55 minutes, or until a toothpick comes out clean.
- Allow to cool for 10 minutes before removing from the pan.
- Mix powdered sugar, milk, and vanilla until thick yet pourable.
- Drizzle over the cooled loaf.
- Sprinkle with crushed pistachios for crunch.
