- 1 (9-inch) chocolate cookie pie crust
- 1 (8 oz) package cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 1 1/2 cups whipped topping (like Cool Whip), thawed
- 1/2 cup crushed peppermint candies or candy canes (plus more for garnish)
- Additional whipped topping for garnish
- 1–2 drops red food coloring (optional)
Instructions
- In a large mixing bowl, beat softened cream cheese until smooth and lump-free.
- Add powdered sugar, peppermint extract, and vanilla extract. Mix until fully combined.
- Add red food coloring if using, and mix until the desired light pink color is achieved.
- Gently fold in the whipped topping using a rubber spatula until the filling is light and airy.
- Fold in the crushed peppermint candies, reserving a small amount for garnish.
- Spoon the filling into the chocolate pie crust and spread evenly.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, top with extra whipped topping and sprinkle with crushed peppermint candy. Slice and serve!
