These Santa cookie bars are a festive and easy-to-make dessert perfect for Christmas. They feature a buttery cookie base with mini chocolate chips, M&M’s, and a hidden layer of Oreos. The bars are soft, chewy, and wonderfully Christmassy, with a simple one-bowl preparation method.

- 1 cup unsalted butter, softened
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ¼ tsp salt
- ¾ cup mini chocolate chips
- 1 cup crushed Christmas Oreos, plus 9 whole Oreos for layering
- ¼ cup Christmas M&M’s
Instructions
- Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving overhang.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs, vanilla extract, and salt until smooth.
- Add flour and mix until just combined. Do not overmix.
- Fold in chocolate chips, M&M’s, and crushed Oreos, reserving some for the top.
- Press ⅓ of the dough into the pan.
- Arrange 9 whole Oreos over the dough.
- Spread the remaining dough evenly over the Oreos.
- Sprinkle reserved Oreos and M&M’s on top.
- Bake for 22-25 minutes until golden brown and a toothpick comes out mostly clean.
- Cool in the pan for 10-15 minutes before lifting and slicing.
Notes
- Use softened butter, not melted.
- Do not overmix the flour.
- Gently press whole Oreos into the bottom dough layer.
- Cool completely before slicing for clean cuts, or chill for 20 minutes.
- Use parchment overhang to lift bars out of the pan easily.
