This creamy sausage tortellini soup combines Italian sausage, cheese tortellini, vegetables, and a rich broth in a slow cooker for an effortless, comforting dinner perfect for busy evenings.

- 1 pound Italian sausage (mild or spicy)
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) crushed tomatoes
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 9 ounces cheese tortellini (fresh or frozen)
- 2 cups fresh spinach, chopped
- 1 tablespoon olive oil
- 1.5 teaspoons Italian seasoning
- Salt and black pepper to taste
- 0.25 teaspoon red pepper flakes (optional)
- Grated Parmesan for garnish
Instructions
- Heat olive oil in a skillet over medium heat and brown the Italian sausage until crumbly, 5–7 minutes, then drain excess grease.
- Transfer browned sausage to the crockpot and add diced onion, minced garlic, crushed tomatoes, Italian seasoning, red pepper flakes, and chicken broth. Stir to combine.
- Cover and cook on low for 5–6 hours or on high for 3–4 hours until flavors meld.
- About 30 minutes before serving, stir in heavy cream and cheese tortellini, then cover and cook until tortellini are tender.
- Ten minutes before serving, add chopped spinach and stir until wilted. Season with salt and pepper to taste.
- Ladle soup into bowls, garnish with grated Parmesan, and serve with crusty bread or garlic knots.
