  • 4 veal shanks (about 11.5 lbs each)
  • 2 carrots, chopped
  • 2 onions, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Zest of 1 lemon
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep ingredients by chopping vegetables into uniform pieces.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear veal shanks until browned on all sides (about 4 minutes per side). Remove shanks.
  3. In the same pot, add onions, carrots, celery, and garlic. Cook until onions are translucent (about 5 minutes).
  4. Deglaze with white wine, scraping up any brown bits from the pot; simmer until reduced by half.
  5. Return veal shanks to the pot along with beef broth, thyme, bay leaves, and lemon zest. Bring to a simmer and cover.
  6. Reduce heat to low and simmer gently for about 2 hours or until meat is fork-tender.
