  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and thinly sliced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (19-ounce) bag frozen cheese tortellini
  • 1 ½ cups heavy cream
  • 2 cups fresh baby spinach leaves
  • 1 cup shredded Parmesan cheese
  • Parsley, for garnish
  • 2 pounds beef stew meat (or chuck roast, cut into 1-inch cubes)
  • 6 cups beef broth
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup quick pearl barley
  • Fresh parsley, for garnish
  • 1 cup shredded carrots
  • 2 stalks celery, chopped
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups broccoli florets, chopped
  • 2 ½ teaspoons salt
  • 1 ½ teaspoons black pepper
  • 4 cups chicken broth
  • 2 cups heavy cream
  • ¼ cup flour
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. For Nacho Soup: Add browned ground beef to the slow cooker. Stir in onion, red bell pepper, garlic, jalapeño, corn, black beans, tomatoes with green chiles, taco seasoning, and chicken broth. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  2. About 30 minutes before serving Nacho Soup, whisk together heavy cream and flour. Stir into the soup. Add cheddar cheese, cover, and cook for another 20–30 minutes until thickened and creamy.
  3. For Creamy Tortellini Soup: Brown Italian sausage in a skillet over medium heat. Drain grease and transfer sausage to the slow cooker. Stir in diced onion, minced garlic, and sliced carrots. Add chicken broth, Italian seasoning, salt, and pepper. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. About 30 minutes before serving Creamy Tortellini Soup, stir in cheese tortellini. Cover and cook until pasta is tender. Stir in heavy cream, spinach, and Parmesan cheese. Cook for another 5–10 minutes on LOW until spinach wilts and soup is creamy.
