- 6 cloves Garlic (Fresh garlic offers robust flavor.)
- 1/2 cup Lemon Juice (Adds brightness; lime juice works too.)
- 1/2 cup Olive Oil (Extra virgin adds richness.)
- 2 tbsp Fresh Rosemary (Infuses the dish with herbal notes.)
- 2 tbsp Dijon Mustard (Optional for tang.)
- 2 cups Water (Creates steam to keep lamb moist.)
Instructions
- In a blender, combine garlic, lemon juice, olive oil, rosemary, and Dijon mustard. Pulse until smooth for about 5-10 seconds.
- Generously season lamb with salt and pepper. Place in a sealable bag, pour marinade over, seal the bag, and massage gently. Marinate in the fridge for 4 hours or overnight.
- Preheat your oven to 220°C (200°C fan forced) for the initial roast.
- Transfer marinated lamb into a baking dish. Pour in 1 cup of water, cover tightly with baking paper and foil, and bake for 2 hours.
- Remove cover after 2 hours, add another cup of water, lower temperature to 160°C (140°C fan forced) and bake uncovered for an additional 2 hours.
- Once done, let lamb rest covered with foil for 30 minutes. Shred or slice meat and serve with seasonal vegetables.
