- 4 salmon fillets
- 2 tablespoons smoked paprika
- ½ cup green olives, sliced (preferably kalamata or green)
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juice and zest
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a small bowl, mix the olive oil, smoked paprika, minced garlic, lemon juice, and zest. Stir to combine.
- Place the salmon fillets in a shallow dish. Pour the marinade over the fillets, ensuring every piece is well-coated. Season with salt and pepper. Let marinate for approximately 10 minutes.
- Heat a large non-stick skillet or grill pan over medium-high heat. Add a little olive oil if needed.
- Once the pan is hot, add the marinated salmon fillets skin-side down. Cook for about 4-5 minutes for medium doneness, depending on the thickness of the fillets.
- After flipping the salmon, scatter the sliced green olives around the fillets, letting them warm through as the salmon continues to cook for an additional 3-4 minutes.
- Ensure the salmon is cooked to your preference. It should easily flake with a fork but remain moist.
- Once cooked, transfer the salmon to a serving plate.
- Sprinkle with fresh parsley before serving for a burst of color and flavor.
