Instructions

  1. In a small bowl, mix the olive oil, smoked paprika, minced garlic, lemon juice, and zest. Stir to combine.
  2. Place the salmon fillets in a shallow dish. Pour the marinade over the fillets, ensuring every piece is well-coated. Season with salt and pepper. Let marinate for approximately 10 minutes.
  3. Heat a large non-stick skillet or grill pan over medium-high heat. Add a little olive oil if needed.
  4. Once the pan is hot, add the marinated salmon fillets skin-side down. Cook for about 4-5 minutes for medium doneness, depending on the thickness of the fillets.
  5. After flipping the salmon, scatter the sliced green olives around the fillets, letting them warm through as the salmon continues to cook for an additional 3-4 minutes.
  6. Ensure the salmon is cooked to your preference. It should easily flake with a fork but remain moist.
