- 4 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 cup heavy cream
- 1 tablespoon all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (optional, for heat)
- Fresh parsley for garnish (optional)
Instructions
- Pat the chicken thighs dry and season on both sides with salt and black pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken thighs skin-side down to the pan. Sear for about 5-7 minutes until golden brown, then flip and cook for an additional 3-4 minutes. Remove and set aside.
- In the same skillet, add the diced onion and cook for about 3 minutes until softened. Then, add the minced garlic and sauté for an additional minute until fragrant.
- Pour in the chicken broth and Worcestershire sauce. Stir in the dried thyme, paprika, and cayenne pepper (if using). Bring to a simmer.
- In a small bowl, combine the flour and heavy cream, whisking until smooth. Slowly pour this mixture into the skillet while stirring to avoid lumps.
- Place the seared chicken thighs back into the skillet, submerging them in the gravy mixture.
- Reduce heat to low and cover the skillet. Allow the chicken to simmer for 45 minutes.
- Ensure the chicken reaches an internal temperature of 165°F (75°C). If the gravy is too thick, you can add a bit more chicken broth to achieve the desired consistency.
- Garnish with fresh parsley if desired, then serve hot.

- For extra flavor, marinate the chicken thighs overnight.
- Serve with rice or mashed potatoes to soak up the gravy.
