Instructions

  1. Pat the chicken thighs dry and season on both sides with salt and black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken thighs skin-side down to the pan. Sear for about 5-7 minutes until golden brown, then flip and cook for an additional 3-4 minutes. Remove and set aside.
  4. In the same skillet, add the diced onion and cook for about 3 minutes until softened. Then, add the minced garlic and sauté for an additional minute until fragrant.
  5. Pour in the chicken broth and Worcestershire sauce. Stir in the dried thyme, paprika, and cayenne pepper (if using). Bring to a simmer.
  6. In a small bowl, combine the flour and heavy cream, whisking until smooth. Slowly pour this mixture into the skillet while stirring to avoid lumps.
  7. Place the seared chicken thighs back into the skillet, submerging them in the gravy mixture.
  8. Reduce heat to low and cover the skillet. Allow the chicken to simmer for 45 minutes.
  9. Ensure the chicken reaches an internal temperature of 165°F (75°C). If the gravy is too thick, you can add a bit more chicken broth to achieve the desired consistency.
  10. Garnish with fresh parsley if desired, then serve hot.
