- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract (optional)
- Sugar for rolling (granulated or colored, optional)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the dry ingredients to the wet mixture. Stir until just mixed; be careful not to overmix.
- (optional): If desired, chill the dough in the refrigerator for at least 30 minutes to help the cookies maintain their shape.
- Scoop tablespoons of cookie dough and roll them into balls. Roll the balls in sugar if desired for added sweetness and decoration.
- Arrange the cookie balls on the prepared baking sheets, leaving space for spreading.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- (optional): Once cooled, feel free to frost with icing or sprinkle more sugar if desired.
