- ½ tsp salt
- 3 ripe bananas (mashed)
- ½ cup sourdough starter
- ½ cup brown sugar
- 2 large eggs
- ½ cup chopped walnuts or pecans (toasted)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
- In a medium bowl, mix together flour, baking soda, and salt.
- In another bowl, mash the bananas and combine with sourdough starter, brown sugar, and eggs until smooth.
- Fold the dry ingredients into the wet mixture until just combined; avoid overmixing. Gently fold in the nuts.
- Divide the batter among muffin cups, filling each about two-thirds full. Bake for 20-25 minutes or until a toothpick comes out clean.
