- 2 salmon fillets
- 1 cup fresh spinach
- 1/2 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon lemon juice (optional)
Instructions
- Pat the salmon dry and slice a horizontal pocket in the middle of each fillet.
- Heat olive oil in a pan, sauté garlic for 30 seconds, then add spinach and cook until wilted.
- Let spinach cool slightly, then mix with crumbled feta in a bowl.
- Stuff each salmon fillet with the spinach-feta mixture.
- Preheat oven to 375°F (190°C) and place fillets on a lined baking sheet.
- Drizzle salmon with olive oil, season with salt and pepper.
- Bake for 15–18 minutes, or until salmon flakes easily with a fork.
- (Optional) Squeeze lemon juice over the top before serving.
