- 12 slices French baguette
- 1 cup cherry tomatoes, chopped
- 1 clove garlic, halved
- 6 fresh basil leaves, finely chopped
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 6 small mozzarella balls or 1 large ball, torn into ghost shapes
- 6 black olive slices or edible ink for eyes
Instructions
- Preheat oven to 375°F (190°C) and slice baguette into 1/2-inch thick rounds.
- Arrange slices on a baking sheet and toast for 7–10 minutes until golden and crisp.
- Rub toasted bread with the cut side of a garlic clove for extra flavor.
- In a bowl, mix chopped cherry tomatoes, basil, olive oil, salt, and pepper. Let sit for 10 minutes.
- Spoon the tomato mixture onto each toasted bread slice evenly.
- Shape mozzarella into ghost forms using a spoon or hands and place one on each bruschetta.
- Use tiny bits of black olive or edible ink to give each ghost eyes and a mouth.
- Arrange on a festive platter with extra basil or arugula for garnish.
- Serve immediately for best texture and taste.
