Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan.
  2. For the crust: Cream together softened butter and granulated sugar until fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture to form a dough. Press dough evenly into the bottom of the prepared pan and bake for 10-12 minutes until lightly golden. Let cool slightly.
  3. For the filling: Beat softened cream cheese until smooth. Gradually add granulated sugar and vanilla extract. Add eggs one at a time, mixing on low speed. Gently stir in sour cream and 1 tablespoon of flour until smooth.
  4. Pour the cheesecake filling over the cooled cookie crust. Smooth the top and gently tap the pan on the counter to remove air bubbles.
  5. Reduce oven temperature to 325°F (163°C). Bake the cheesecake for 40-50 minutes, or until the edges are set and the center has a slight jiggle. If edges brown too quickly, loosely cover them with foil.
