Easy Sweet Potato Bread Recipe


Ingredients

  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs (room temperature)
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ⅓ cup water (room temperature)
  • 1 cup mashed sweet potato (cooked)
  • 1 ¾ cups all purpose flour (sifted)
  • 1 teaspoon baking soda
  • ¼ teaspoon table salt
  • 1 tsp pumpkin pie spice (or cinnamon)
  • ½ cup pecans (chopped)

Instructions

  1. Preheat the oven to 350°F.
  2. Grease and line a 9×5-inch loaf pan with parchment paper. Let it overhang on the sides for easy removal.
  3. Add the flour, baking soda, table salt, and pumpkin pie spice to another bowl. Whisk to combine. Set aside until needed.
  4. Add the brown sugar, granulated sugar, eggs, vegetable oil, water, vanilla extract, and the mashed sweet potato to a large bowl.
  5. Use a hand mixer to whip the ingredients until well combined.
  6. Add the dry ingredients to the wet ingredients, mix until there are no dry patches of flour but only enough to combine.
  7. Add the chopped pecans, and gently fold them into the batter.
  8. Pour the batter into the prepared pan. Tap it on the counter to remove any air bubbles.
  9. Place the loaf pan on the center rack of the preheated oven and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Remove the pan from the oven and place it on a wire rack to cool before removing it from the pan.
