Easy Sweet Potato Bread Recipe
Ingredients

- ½ cup granulated sugar
- ½ cup light brown sugar
- 2 large eggs (room temperature)
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- ⅓ cup water (room temperature)
- 1 cup mashed sweet potato (cooked)
- 1 ¾ cups all purpose flour (sifted)
- 1 teaspoon baking soda
- ¼ teaspoon table salt
- 1 tsp pumpkin pie spice (or cinnamon)
- ½ cup pecans (chopped)
Instructions
- Preheat the oven to 350°F.
- Grease and line a 9×5-inch loaf pan with parchment paper. Let it overhang on the sides for easy removal.
- Add the flour, baking soda, table salt, and pumpkin pie spice to another bowl. Whisk to combine. Set aside until needed.
- Add the brown sugar, granulated sugar, eggs, vegetable oil, water, vanilla extract, and the mashed sweet potato to a large bowl.
- Use a hand mixer to whip the ingredients until well combined.
- Add the dry ingredients to the wet ingredients, mix until there are no dry patches of flour but only enough to combine.
- Add the chopped pecans, and gently fold them into the batter.
- Pour the batter into the prepared pan. Tap it on the counter to remove any air bubbles.
- Place the loaf pan on the center rack of the preheated oven and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Remove the pan from the oven and place it on a wire rack to cool before removing it from the pan.
