Description
A comforting and delicious sweet potato casserole topped with mini marshmallows.
Ingredients

- 4 large sweet potatoes, peeled and cut into pieces
- 1 cup light brown sugar
- ½ cup butter, melted
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- 10 oz mini marshmallows
Instructions
- Preheat oven to 350°F (175°C).
- Boil sweet potatoes until tender, about 15-20 minutes. Drain and mash.
- Mix in brown sugar, melted butter, vanilla, cinnamon, salt, and nutmeg until smooth.
- Spread the mixture in a greased baking dish and top with mini marshmallows.
- Bake for 25-30 minutes until marshmallows are golden.
