- 2 medium sweet potatoes (about 500g)
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tsp garlic powder
- 1 tsp ground cumin
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into 1-inch pieces. In a bowl, toss with olive oil, salt, pepper, garlic powder, and cumin.
- Add the chickpeas to the bowl and mix until well combined.
- Spread the mixture on a parchment-lined baking sheet in a single layer.
- Bake for 25-30 minutes until golden brown and crispy.
- Allow to cool slightly before serving.
