Ingredients

  • 2 cups Sweet Potatoes (Garnet or Jewel varieties)
  • 1 medium Onion (Chopped)
  • 1 medium Green Pepper (Chopped)
  • 2 cloves Garlic (Minced)
  • 1 pound Turkey Sausage (Substitute with chicken or veggie sausage if desired)
  • 6 large Eggs
  • 1 cup Milk (Whole, low-fat, or almond milk)
  • 1 teaspoon Fresh Thyme (Dried thyme can be used)
  • to taste Salt
  • to taste Pepper
  • 1 cup Shredded Cheese (Cheddar or mozzarella)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat avocado oil over medium heat. Add onion, green pepper, and sweet potatoes, cooking for 8-9 minutes until softened. Stir in garlic for the last couple of minutes.
  3. Transfer the cooked vegetables to the greased casserole dish, spreading evenly across the bottom.
  4. In the same skillet, add turkey sausage and cook until browned and crumbled, about 5-7 minutes. Mix with the vegetable layer in the casserole dish.
  5. In a bowl, whisk together eggs, milk, thyme, salt, pepper, and shredded cheese until smooth.
  6. Pour the egg mixture evenly over the sausage and vegetables. Stir gently to coat.
  7. Bake in the preheated oven for 40-45 minutes until set and lightly golden on top.
  8. Remove from the oven and cool for about 15 minutes before serving.
