- 2 cups Sweet Potatoes (Garnet or Jewel varieties)
- 1 medium Onion (Chopped)
- 1 medium Green Pepper (Chopped)
- 2 cloves Garlic (Minced)
- 1 pound Turkey Sausage (Substitute with chicken or veggie sausage if desired)
- 6 large Eggs
- 1 cup Milk (Whole, low-fat, or almond milk)
- 1 teaspoon Fresh Thyme (Dried thyme can be used)

- to taste Pepper
- 1 cup Shredded Cheese (Cheddar or mozzarella)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat avocado oil over medium heat. Add onion, green pepper, and sweet potatoes, cooking for 8-9 minutes until softened. Stir in garlic for the last couple of minutes.
- Transfer the cooked vegetables to the greased casserole dish, spreading evenly across the bottom.
- In the same skillet, add turkey sausage and cook until browned and crumbled, about 5-7 minutes. Mix with the vegetable layer in the casserole dish.
- In a bowl, whisk together eggs, milk, thyme, salt, pepper, and shredded cheese until smooth.
- Pour the egg mixture evenly over the sausage and vegetables. Stir gently to coat.
- Bake in the preheated oven for 40-45 minutes until set and lightly golden on top.
- Remove from the oven and cool for about 15 minutes before serving.
