Description

Healthy Carrot and Orange Tart: No Flour, No Sugar


Ingredients

Scale
  • 3 medium carrots (grated)
  • 3 eggs
  • 1 teaspoon ground cinnamon
  • Zest of 1 orange
  • Juice of 1 orange
  • 100 g ground almonds (almond flour)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 40 g pitted dates (soaked and crushed)
  • 1 pinch of salt

Instructions

  1. Preheat the oven to 180 °C and grease a baking pan.
  2. Beat the eggs with the vanilla extract until frothy.
  3. Add the crushed dates and mix well.
  4. Incorporate the orange zest and juice along with the grated carrots.
  5. Add the ground almonds, cinnamon, baking powder, and salt; mix gently.
  6. Pour the mixture into the pan and bake for 35 to 40 minutes until a toothpick comes out clean.
  7. Allow to cool completely before unmolding and decorate as desired.
