Healthy Carrot and Orange Tart: No Flour, No Sugar
Ingredients
Scale
- 3 medium carrots (grated)
- 3 eggs
- 1 teaspoon ground cinnamon
- Zest of 1 orange
- Juice of 1 orange
- 100 g ground almonds (almond flour)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 40 g pitted dates (soaked and crushed)
- 1 pinch of salt
Instructions
- Preheat the oven to 180 °C and grease a baking pan.
- Beat the eggs with the vanilla extract until frothy.
- Add the crushed dates and mix well.
- Incorporate the orange zest and juice along with the grated carrots.
- Add the ground almonds, cinnamon, baking powder, and salt; mix gently.
- Pour the mixture into the pan and bake for 35 to 40 minutes until a toothpick comes out clean.
- Allow to cool completely before unmolding and decorate as desired.
